The basic cake must be of a type both light and sturdy so that no sagging oc­ curs when the tiers are stacked; the cake must also be rich enough to stay moist throughout its rather lengthy assembly period. An ideal choice is a creamed cake such as the one used in this demonstra­ tion (recipe, page 1 06). The tiers-which can be baked the day before assembly to ease the work of the cook-should be of graduated sizes: The cake here has 6-, 9- and 12-inch [15-, 23- and 30-cm.] tiers. Each tier is given a firm base by a card­ board cake circle, and each receives addi­ tional support from short wooden dowels inserted into the tier beneath. To pre­ vent the assembled tiers from sliding sideways, a longer wooden dowel pins all the tiers together; suitable %-inch [6-mm.] dowels are available at hard­ ware and cakemaking-supply stores. Wedding cakes receive their basic coat of frosting-traditionally, it is an ivory­ colored rich butter cream - before the tiers are stacked. Deco rations piped onto the assembled cake should be of the same ivory butter cream as the basic frosting: A mistake made with frosting of a contrasting color is im­ possible to erase.
